Easy Cheesy Potatoes for 2
EASY CHEESY POTATOES FOR 2
Ingredients:
3/4 lb diced potatoes or 8 oz country style hash browns
1 TBS Butter or margerine
1/4 cup sour cream
1/4 cup condensed cream of chicken soup or cream of cheddar (I used cream of mushroom)
1-1/2 TBS chopped green onions (I used yellow)
1/2 cup shredded cheddar cheese (I used Colby Jack Cheese and put all of it in the casserole and used more to top it)
Directions:
Preheat oven to 375F and grease a small baking dish
If using fresh potatoes, placein a saucepan of cold water and simmer over medium-low heat 12-15 minutes or until fork tender. Drain and allow to cool slightly
Melt butter, add sour cream, soup, and onion and cheese
Toss in the potatoes (or frozen hash browns) and combine. Spread into a prepared baking dish.
Add more cheese to the top and bake for about 30 minutes or until browned and bubbly.
