Potatoes au Gratin

INGREDIENTS:

2 TBS softened butter

4 russet potatoes, scrubbed clean, sliced in quarters

1 & 1/2 cups heavy cream (I used bulk creamer from work, that would have been tossed because machine registered 0% and was short so added 3/4 cup whole milk for correct amount ~ maybe kitty should not have gotten any for a couple days before I found the recipe, she loved it though)

1/2 cup whole milk

2 TBS flour

1 tsp salt

Ground Black Pepper to taste (I use alot because I love it)

6 cloves garlic finely minced

1 cup (or more) shredded Colby Jack Cheese (or any yellow cheese you prefer)

DIRECTIONS:

Preheat oven to 425 degrees Fahrenheit

Spread the butter over the bottom of a 2 Qt. Baking dish

Whisk together cream, mil, flour, garlic, salt, and LOTS of pepper (or your preference)

Place 1/3 of potatoes in bottom of dish.  Pour third of cream mixture over potatoes.  Do this two more times,. ending with cream mixture on top.  Cover with foil and bake for 35 - 40 minutes.  Remove foil and bake another 25 - 30 minutes or until potatoes are golden brown and are cooked through and bubbly

Put cheese on top (you may want more than 1 cup).  Bake until cheese is melted and bubbly.  Should only take about 3 minutes (give or take)

Let potatoes sit for a couple minutes before serving.
