Pork Tacos Made with Leftovers
Ingredients
- ▢2 Lbs leftover pork tenderloin could easily substitute leftover chicken
- ▢½ small chopped red onion
- ▢2 medium chopped tomato
- ▢guacamole
- ▢chopped cilantro
- ▢jar salsa of your choice
- ▢½ cup plain greek yogurt
- ▢1 tsp or to taste taco seasoning
- ▢2-3 limes
- ▢Package of flour tortillas
- ▢Bottle of your favorite Sangria
Instructions
- Mix the greek yogurt and taco seasoning together and set aside
- Chop the tomatoes, onions and cilantro and set each aside in bowls separately
- Cube your pork into ½ cubes
- Place pork in a microwave bowl adding about a teaspoon of water.
- Cover bowl with saran wrap and microwave for about 2 minutes on 70 % power. You just want to warm the meat not cook it. The water and saran wrap will keep it from drying out.
- Assemble your taco in your tortilla using any of the ingredients listed above
- Pour and glass of Sangria and finally enjoy your meal
