Bacon wrapped Cheesy Potato Bombs
Bacon Wrapped Cheesy Potato Bombs
Ingredients:
2 cups leftover and chilled Mashed Potatoes
Bacon ~ you will need one slice per Bomb
1 Egg
1/2 cup Dry Bread Crumbs
Cheddar Cheese cut into 1″ chunks (one chunk per Bomb) (you can use any kind of cheese you want, I have seen recipes with smoked Gouda, swiss, and mozzarella ~ it will depend on what you like)
Salt and Pepper to taste
Skewers or toothpicks
Oil for frying (I prefer Canola but any oil frying oil will do)
Directions:
In a large bowl combine the Mashed Potatoes, Egg, salt and pepper until well blended
Grab a small scoop of the Mashed Potatoes and gently form it around a Cheddar Chunk
Place the Bread Crumbs into a shallow bowl, and roll evenly in the Bread Crumbs
Wrap the Bomb with one slice of Bacon and secure it with a toothpick or skewer
Fry them until they’re evenly golden on all sides Let them drain on some paper towel
NOTE:
You can cut each bacon slice in half and wrap both pieces of the bacon opposite sides of the potato roll
