Sweet and Sour Soup
Sweet & Sour Soup
Serves 4
2 teaspoons canola oil
1 small onion, chopped
1 rib celery, chopped
1/4 lb snow peas, cut into thin strips
1 can (16 oz) low-sodium diced tomatoes
1 cup water
1/4 cup cider vinegar
1 Tbs. packed brown sugar
1 small head green cabbage, shredded (I have used Napa cabbage)
1/2 cup drained sliced canned water chestnuts
1/4 cup drained canned bamboo shoots
12 oz cooked pork, cut into thin strips (optional)

Warm the oil in a large saucepan over medium heat. Add onion, celery, and snow peas. Cook, stirring frequently, for 4 to 5 minutes, or until tender. Stir in the tomatoes (with juice), water, vinegar, and brown sugar. Simmer for 30 minutes, stirring frequently.
Stir in the broth, cabbage, water chestnuts, and bamboo shoots. Bring to a boil. Reduce the heat to low. Cover and simmer for 20 to 25 minutes, or until the cabbage is tender.
Note: This can be a dual vegetarian/non vegetarian recipe, for mixed eating habits. after bamboo shoots are added, split soup in half and use only 6oz cooked pork, sliced thin.
