ITALIAN DRESSING

MAKES ABOUT 1/2 CUP

1 SMALL CLOVE GARLIC
1 TSP SA;T
2 TBS WINE VINEGAR (CIDER VINEGAR WORKS AS WELL)
1 1/2 TBS FRESHLY SQUEEZED AND STRAINED LEMON JUICE (STORE BOUGHT LEMON JUICE WORKS)
6 TBS OLIVE OIL (CAN USE VEGETABLE OIL FOR A LIGHTER TASTE)
1/2 TSP GROUND BLACK PEPPER

IN A SMALL BOWL MASH THE GARLIC WITH THE SALT.
ADD THE OIL AND PEPPER AND BEAT WITH A FORKO R WHISK UTIL THOROUGHLY BENDED.  REMOVE AND DISCARD ANY REMAINING BITS OF GARLIC (I don't bother with this step unless they are really huge peices)  

Beat again just before serving

NOTE: Various seasonings such as basil, oregano,   dry mustard, minced scallions, tomato or my favorite, Italian Seasoning.  You can omit the lemon juice but I like the little "extra" flavor
