Cheesy Baked Eggs
1 TBS melted butter or margarine
12 large eggs
4 cups (1 lb.) shredded jpepper Jack cheese
1 (16 oz) container cottage cheese
1/2 cup flour
1 tp salt
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Preheat oven to 350 degrees F. Brush melted butter on bottom and sides of 9x13x2-inch baking dish.
Whisk eggs n a large bowl, then whisk in Cheeses, flour and salt. pour mixture into prepared baking dish.
Bake until eggs are completely set and top is golden, about 50 minutes to 1 hour.
NOTE: For an extra little "kick", add a small can of diced chiles or jalapenos. Serve with sour cream, salsa, and/or green or red salsa
**Leftovers can be refridgerated and heated in microwave**
