Mama Kyle's Pickled Herring
* Cut fish into small pieces
*place in jar, sprinkling with 5/8 cup canning salt for each quart of fish
*Cover with Cider vinegar and let stand in refrigerator for 5 days
*drain and rinse fish well in ice water
*Pack in jars adding onion slices over each layer
*Cover with cold pickling solution made by simmering 2 cups sugar and 1 TBS pickling spice to 1qt White Vinegar
*Refrigerate
*Ready to eat in 7 days

My ex-husband and I loved this recipe. Don is ok with it but have not made it in quite awhile because no one has been fishing. May have to buy some fresh fish and try it again. Would have been great for New Years Eve
