MAMA KYLE'S PICKLED HERRING RECIPE
Cut fish into small pieces
*place in jar, sprinkling with 5/8 cup canning salt for each quart of fish
*Cover with Cider vinegar and let stand in refrigerator for 5 days
*drain and rinse fish well in ice water
*Pack in jars adding onion slices over each layer
*Cover with cold pickling solution made by simmering 2 cups sugar and 1 TBS pickling spice to 1qt White Vinegar
*Refrigerate for up to 1 month
