Cheese-Coated Spinach Dip
Ingredients
1 Tbs. Olive Oil, divided
1/2 C. Onion, chopped
2 Garlic Cloves, minced
2 10 oz. packages Frozen Cut Spinach, thawed and drained
1/2 C. 2% Milk
6 oz. Cream Cheese
1 C. Shredded Mozzarella Cheese, divided
1/4 C. Shredded Colby-Jack Cheese
Sea Salt, to taste
Ground Black Pepper, to taste
Directions
Preheat oven to 425 degrees. Grease a large gratin dish with 1 teaspoon of olive oil. Warm the remaining olive oil in a large stockpot over medium heat. Add onion and garlic; cook, stirring frequently, until ingredients start to brown. Add spinach and let mixture simmer until the leaves have wilted. Drain mixture and pour into a large bowl. Return stockpot to heat. Pour in the milk. Add the cream cheese and cook, stirring continuously, until fully incorporated. Stir in the spinach mixture, 1/2 cup of mozzarella, and the Colby-Jack. Season with salt and pepper as needed. Pour spinach dip into prepared baking dish. Sprinkle with the remaining mozzarella cheese. Bake for about 20 minutes until warmed through and bubbly. Serve warm.
