Butternut Squash (or any other squash you prefer)
You can't go wrong with squash. It is packed with vitamins and minerals and easy to make.
cut your squash in half and take the seeds and yuck out of it. With a fork, poke multiple holes all around the top. Place a huge chunk of butter or margarine in the pocket where the seeds were removed. Salt and pepper to your liking.
Bake at 375 degrees
Place on a cookie sheet and bake until flesh is super soft.
When done, pour butter into a big bowl and scoop out all the flesh and also put into the bowl. Mix it up well. If still a little stringy or chunky, you can use a hand mixer to whip it up some more.

I totally forgot we had a bunch of Don's favorite squash on the porch. He suggested it. Another win in this household

If you need to have your squash more liquidly, add some milk and put in blender.
Some suggested spices would be cinnamon, salt & Pepper, Italian seasoning or whatever else you choose.
