Squash Baby Food
1 Butternut squash, halved and seeded
1 Tablespoon olive oil

[*]Preheat the oven to 180 C (356 F) / Gas 4.

[*]Brush the cut sides of the butternut squash with olive oil. Place the butternut squash cut side down on a baking tray.

[*]Bake in the preheated oven and cook for about 45 minutes, or until the squash is soft.

[*]Scrape out the butternut squash, leaving the skin behind. Transfer to a blender or food processor. Puree till smooth.

[*]erve once cool, or to freeze for later: fill an ice cube tray with the squash puree. Freeze for at least 2 hours, till solid. Remove cubes from tray and place in a freezer bag. To defrost, place in microwave for 30 seconds, or as needed.
