Corn Muffins with Plant-based Ingredients Empty Corn Muffins with Plant-based Ingredients

1 PKG Jiffy Vegetarian Corn Muffin Mix
3TBS Aquafaba (canned chickpea liquid)
1/3 cup Almond, Soy, or Coconut Milk



Preheat oven to 400F

Grease a muffin pan or use paper baking cups.  Stir ingredients together.  Batter will be slightly lumpy.  (For maximum crown on muffins, let batter rest for 3 to 4 minutes.  Stir batter lightly before filling cups)  Fill muffin cups 2/3 full.  Bake 15 - 20 minutes or until golden brown

*Variation:  Use 1/3 cup unsweetened applesauce in place of aquafaba.
