Chicken Casserole with Stove Top Stuffing Empty Chicken Casserole with Stove Top Stuffing

~ 1 1/2 lb boneless and skinless chicken breast and/or thighs

~ 6oz Stove Top Stuffing (any flavor)

~ 1 3/4 boiling water

~ 10 3/4 oz undiluted cream of mushroom soup

~ !/3 cup sour cream

~ salt and pepper to taste

Preheat oven to 400 degrees

spray 13x9 casserole dish with cooking spray

Cut chicken into bite size pieces.  Sprinkle with salt and pepper or seasoning salt

put hot water and stuffing into a mixing bowl and set aside

combine the sour cream and undiluted cream of mushroom soup in a medium size bowl. Blend until smooth

Spread sour cream mixture over chicken and top with stuffing

Bake 25 - 30 minutes until reaches an internal temperature of 160 degrees

Remove from oven and let stand 5 minutes before serving

If using leftover chicken, need to only cook about 15 minutes until heated through

You can add green beans, mix veggies, etc for added flavor and stretch out the servings

If you want a creamier casserole use 2 cans of undiluted cream of mushroom soup

I made this awhile ago.  I did season my chicken with onion powder and garlic powder and Italian seasoning.
