Bruschetta Chicken Bake
CHICKEN BRUSCHETTA BAKE
What you need:
1 can (14.5 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) Stove top Stuffing mix for chicken ( I had turkey mix on hand and used that instead)
1/2 cup water
2 cloves garlic, minced (I love garlic and used 6)
1-1/2 lb boneless skinless chicken breasts (or use leftovers)
cut into bite-size pieces
1 tsp dried basil leaves
1 cup Shredded Mozzarella Cheese

Heat oven to 400F degrees
Mix tomatoes, stuffing mix, water, and garlic just until stuffing mix is moistened
Layer chicken, basil and cheese in 3-qt casserole dish sprayed with cooking spray
Top with stuffing mixture
Bake 30 minutes or until chicken is done (if using leftovers, cook to internal temp of 165)
Note: I also added a small can of mushrooms, rinsed off and some sliced baby carrots.
