Curry Roasted Potato Wedges
Curry Roasted Potato Wedges
4 leftover skin-on baked potatoes
1/4 leftover bacon grease
1/2 tsp curry powder
Cut potatoes into quarters lengthwise Heat bacon grease in skillet over low heat, add curry powder. Stir unrtil curry powder is avsored by bacon grease. Remove from heat and let cool for 5-10 minutes. Toss potatoe wedges in bacon-curry mixture. Arrange them skin side up on baking sheet. Place under broiler 5-6 inches from flame for about 8-10 minutes. Don't scorch. Serve with butter and sour cream.
