Vegan Nacho Cheese and Veggie Dip
Vegan Nacho Cheese & Veggie Dip
serves 6
Ingredients:
1 cup peeled and boiled potatoes
1 cup roasted red bell peppers
1/2 cup diced tomato
2 garlic cloves, chopped
1 Jalapeno pepper seeded and diced (you can use the seeds if you like it spicier)
1 tsp onion powder
1 tsp cumin
1 tsp turneric
2 TBS nutritional yeast
1/4 cup plain unsweetened nut-free non-dairy milk or water
Directions:
Place all the ingredients in a blender or food precessor
Blend on high until mixture is smooth
Transfer mixture to a saucepan and set over medium heat, stirring frequently, heat dip for approximately 10 minutes.
Serve immediately with tortilla chips or fresh sliced vegetables. Can store in fridge for up to 3 days
