Raeja's Chicken Stock Recipe
RAEJA'S CHICKEN STOCK RECIPE
Ingregdients:
2 chicken leg quarters
1 large onion, cut in half
20 Baby carrots, leave whole
3 large stalks celery
20 Peppercorns
4 bay leaves

Directions:
Place everything in a 6qt pot. Cover with enough water to cover everything. Bring to a boil and reduce heat to low/simmer. Simmer for 2 hours. remove from heat and remove all ingredients.
In a large bowl, put a colander in it and pour contents into colendar. Remove colendar and drain.
Put liquid in size appropriate bowl and same with rest of ingredients. Pull Chicken to debone and put in seperate container.
Slice/Chop onion, carrots, and celery. Refridgerate overnite. You can cut up the next day if you prefer
Debone and cut up chicken thighs. Discard bones. Refidgerate overnite. After you debone chicken, you can cut it up the next day, if you prefer.
Refridgerate liquid over night.
Remove fat from stock and it is ready to use.
Add onions, carrots, chicken, & celery to stock if you wish. This is your basic soup base
