Creamy Chicken Stew


Ingredients:


1 TBS butter or margerine


2 TBS Olive oil or vegetable oil (I prefer Olive Oil)


2 Boneless chicken breasts uncooked & cut into bite size pieces (Do not use leftover chicken breast, I did and that was                                                                                               a mistake.  Lost alot of good flavor)


1 TBS Italian Seasoning


salt and pepper to taste (I omit salt because Don salts before trying food)


1 medium onion, diced


2 large potatoes, sliced (I diced mine and did not peel them)


1 cup baby carrots (I sliced mine because I had to puree this for Don to be able to eat)


3 stalks celery, diced


1 can green beans, drained


10.5 oz can Cream of Chicken soup, undiluted


1 cup WHOLE milk (don't substitute low fat)


1 cup Greek Yogurt (you can use sour cream but I prefer Greek Yogurt)


1 oz dry ranch dressing mix (I may try 2 packages the next time I make this)


Directions:


Melt butter in a soup pot over meduim heat


Season cubed chicken with salt, pepper and Italian seasoning.  Add to the pot and saute until cooked through.  Remove from pot


Add oil to the pot along with the vegetables.  Cook until softened, about 5 or 6 minutes.  Add chicken back in


combine the cream of chicken soup, milk, yogurt, and ranch seasoning packet.  Add to the pot and stir until well blended.


Let the soup simmer until the potatoes and carrots are fork tender, 45 minutes - 1 hour.

Was not a favorite for Don.  Had to use milk to thin down, to get it to the right consistency for him to eat.
