Wilma's Fruit Cocktail Cake
WILMA'S FRUIT COCKTAIL CAKE
Sift together 1 1/2 cups flour, 1 cup sugar, 1 tsp baking soda, 1/2 tsp salt. To that add 1 - 17oz can fruit cocktail, 1 beaten egg, 1 stick melted Oleo Mix 1/2 minute by hand Do Not overmix.
Pour into 8x12 greased and floured cake pan.
Mix together 1 cup (or less) chopped nuts, 1 cup brown sugar, 1 up coconut. Sprinkle over batter.
Bake at 350 degrees 45 minutes
"I turn the heat down after 30 minutes to 325 degrees and bake 5 minutes longer than the 45 minutes" (this is what was quoted on the recipe card that belonged to my Grandma Monica who passed away in 1976)
