Crockpot Breakfast
Put this in the crockpot before bed and you'll have a delicious
breakfast to serve your company!
1 bag of frozen hash brown potatoes (32oz)
1lb of bacon diced, cooked and drained OR 1lb of cooked ham, cubed OR
1lb sausage links
1 medium diced onion
1 green bell pepper diced
1 1/2 cups shredded cheddar or monteray Jack cheese
1 dozen eggs
1 cup of milk
1 tsp of salt
1 tsp of pepper (more or less to taste)
Place layer of frozen potatoes on the bottom of the slow cooker,
followed by a layer of bacon (or whatever meat you used), then onions,
green pepper and cheese. Repeat the layering process two or three more
times, ending with a layer of cheese. Beat the eggs, milk and salt and
pepper together. Pour over the Crockpot mixture, cover and turn on
low. Cook for 10-12 hours.
You do not want to add more eggs than called for. This will feed 8
real hungry people or 10-12 not so hungry.
You can add mushrooms for more flavor, or when done add salsa and sour
cream if desired.
