Cranberry Spritz (Mocktail)

This is a special spirit free take on a mojito!
Serves 1
Muddle 10 mint leaves, 1 tsp. light brown soft sugar and the juice of 1/2 lime together in a highball glass, using a spoon or the flat end of a rolling pin. Add a generous handful of crushed ice to the glass and pour over 100 ml cranberry juice. Top up with 50 ml soda and garnish with a sprig of mint and a lime wedge. Serve immediately.
