YIELD: 2 loaves


INGREDIENTS



1 1cups brown sugar

3cup vegetable oil

egg

2 1cups all-purpose flour

cup buttermilk

teaspoon salt

teaspoon baking soda

teaspoon ground cinnamon

teaspoon vanilla

2 1cups rhubarb, chopped

1cup walnuts (optional) or 1/2 cup pecans (optional)

1cup sugar

tablespoon butter


DIRECTIONS

  • Preheat oven to 325°F In a medium bowl, mix brown sugar, oil and egg together. Then add flour, milk, salt, baking soda, cinnamon and vanilla. Fold in rhubarb (and nuts, if using).
  • Place in 2 greased 9 x 5" loaf pans.
  • Combine sugar and butter and glaze over top of loaves.
  • Bake for 1 hour
