Sweet and Sour Soup Empty Sweet and Sour Soup

Sweet & Sour Soup
Serves 4





2 teaspoons canola oil
1 small onion, chopped
1 rib celery, chopped
1/4 lb snow peas, cut into thin strips
1 can (16 oz) low-sodium diced tomatoes
1 cup water
1/4 cup cider vinegar
1 Tbs. packed brown sugar
1 small head green cabbage, shredded (I have used Napa cabbage)
1/2 cup drained sliced canned water chestnuts
1/4 cup drained canned bamboo shoots

Warm the oil in a large saucepan over medium heat.  Add onion, celery, and snow peas.  Cook, stirring frequently, for 4 to 5 minutes, or until tender.  Stir in the tomatoes (with juice), water, vinegar, and brown sugar.  Simmer for 30 minutes, stirring frequently.

Stir in the broth, cabbage, water chestnuts, and bamboo shoots.  Bring to a boil.  Reduce the heat to low.  Cover and simmer for 20 to 25 minutes, or until the cabbage is tender.

As you all know, I never follow a recipe to the "T".  I have used olive oil, Napa Cabbage and there is nothing low sodium about me.  I use what I have in the house but you do not want to stray too far off of this recipe.
