I think this is my most favorite chef of all time!  He passed away at the age of 87 in 2001.
He has tons of  recipes and even more cajun humor.
"I Garontee It"
He is famous for cooking with Wine, hot sauce, cajun mustard,
Good Humor and "precise measurements"

I can't find a website with all his recipes, but am finding alot of the shows 
I use to watch when my kids were small.
