Asparagus Soup
ngredients
UK measures - US measures- 1 red onion chopped
- 2 garlic cloves minced
- 250 g asparagus chopped into 2 inch pieces
- 800 ml water
- 2 tbsp chives
- 2 tbsp Greek yogurt
Instructions
- Gently fry the onion and garlic in fry-light until softened
- Add the chopped asparagus and cook for a further 3 minute
- Pour in the water and parsley and simmer for 10 minutes
- Put into a blender and add the Greek yogurt and blend until smooth.
