  • 1 red onion chopped
  • 2 garlic cloves minced
  • 250 g asparagus chopped into 2 inch pieces
  • 800 ml water
  • 2 tbsp chives
  • 2 tbsp Greek yogurt


Instructions


  • Gently fry the onion and garlic in fry-light until softened
  • Add the chopped asparagus and cook for a further 3 minute
  • Pour in the water and parsley and simmer for 10 minutes
  • Put into a blender and add the Greek yogurt and blend until smooth.
