Blender Mayonaise

This makes about 1 1/4 cups (Do Not Double Recipe)

  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp dry mustard
  • 2 TBS freshly squeezed and strained lemon juice
  • 1 cup vegetable or canola oil (Do not use Olive Oil ~ tastes nasty)


Combine the egg, salt, mustard, lemon juice and 1/4 cup of oil in the container of an electric blender.  Cover and whirl at high speed until the ingredients are blended.  Immediately remove the lid and slowly pour in the remaining 3/4 cup oil in a steady stream until the mixture has thickened.  Use the mayonnaise at once or transfer into a small bowl or jar, cover and refrigerate for future use.
